開了2年的貝佛街菜單裡原本就有義大利麵,店長Sam說:「義大利麵現在口味更豐富,用圓直麵、麵疙瘩、細扁麵與2種寬麵,且現點現煮,客人點餐後才開始煮麵再炒。」 餐廳還引進舒肥機(Sous Vide Cooker),海鮮、肉類以低溫真空烹調法烹調,像是新推出的章魚義大利麵,章魚腳就是以舒肥機慢慢煮熟,Sam說:「在舒肥機中,章魚的汁會釋出在真空袋中,汁要保留下來跟麵一起炒。」
